In late February/early March this year, Kat had the chance to visit Rovaniemi, Finland. She spent about a week in Finnish Lapland, chasing the Northern Lights, learning to dogsled, enjoying a reindeer sleigh across the night, and even meeting Santa Claus.

We’re wrapping up our podcast episodes about Ecuador with our day trip to Cotopaxi and Banos from Quito.

We spent about a week in Quito and during this time, we knew we had to take some day trips. We already discussed going to the Mindo Cloudforest on the podcast, and now we’re talking about Cotopaxi National Park and Banos.

Everyone who loves travel likely has a travel bucket list. And, the more you travel, the more it evolves. We’ve talked about dream destinations on the podcast before.

During our 2-week trip to Ecuador, we had about a week in Quito. And during this time, we knew we needed to take some day trips. So, we booked a day trip to the Mindo Cloudforest and it turned out to be the best day trip we took!

Between bird watching, hiking to waterfalls, and chocolate tasting, you cannot go wrong with a day trip to Mindo from Quito. In this episode, we’ll discuss what all we did, who we booked our trip with, what it was like, and our recommendations.

Way back when, we were younger travelers looking to save money as much as possible and travel more. This meant sometimes booking inconvenient flights, flying home before work the next day, etc.

Now in our mid-30s, we noticed that there are a lot of things we used to do in travel that we rarely do anymore. As we all grow and change, so too do our travel styles. For instance, I was a budget backpacker who stayed in hostels in my early 20s. I don’t do that anymore.

And yes, we’ll spend $200+ extra for a flight with 1 layover versus 2. Perhaps its age/wisdom or perhaps we do have a bit more income than in our 20s. Either way, these are things we used to do in travel that we don’t do nearly as much these days.
